At our restaurant, we always have more than 10 kinds of such local sake from Ishikawa Prefecture carefully selected.
Takeba Junmai-shu (Takeba Junmai sake) is especially recommended.
Gohyakumangoku rice grown in Noto is used for its savory rice flavor and sharpness,
And you will enjoy a pleasant mouthfeel.
It is also recommended for sake connoisseurs who want to taste the robust flavor of rice.
Also available is the rarely seen [Kikuhime Ginjo].
It is a limited edition sake that is only released once a year, in June, to authorized distributors in the Hokuriku region,
This ginjo-shu has a soft sweetness with a hint of spiciness.

Kaga cuisine has been cultivated in the ancient capital of Kanazawa, combining the flow of Kyoto-style kaiseki with the culture and climate of Kaga.
